Benefits, hidden under the peel of some vegetables, are eliminated
Health experts told the Daily Mail website that vegetables should not be peeled, as most of the health benefits are hidden in the peel, so when we peel them, we deprive our bodies of benefiting from them.
Nutritionist Moi Jane Detroyer said that the peel contains a lot of insoluble fiber, especially when it is colored, and the most important of these vegetables are potatoes, carrots and cucumbers.
The cucumber, when its skin is dark, contains antioxidants in addition to vitamin K.
And potato skins contain iron, calcium, potassium, magnesium, vitamin B6 and vitamin C.
In order to get the full benefit from the vegetables, they should be washed well with water instead of peeling them.
